THIS WINE TASTES LIKE JOLLY RANCHERS.
End of Review.
Wait, wait! I’m kidding – about the review part, not about the Jolly Ranchers part. Seriously, this wine tastes like melon and raspberries and the best part about this Cave Springs Rosé is that it’s grown in our own backyard.
The Wine: Cave Springs Rosé
Grape: Cabernet Franc
Location: Beamsville, Ontario
Rosé definitely had a moment this summer, with articles about Brosé popping up online and Yes Way Rosé’s Instagram account blowing up, but Rosé is not just a summer wine. Yes, you get more selection in the summer, and nothing beats sitting outside at a cottage or on a deck in the city drinking some pink wine, but this wine can and should be enjoyed in the winter months as well.
The trick to enjoying Rosé in the winter, in my opinion, is to find something on the dryer side – something that isn’t as sweet as your typical summer Rosé. Cave Springs Rosé is dry, but fresh and lively. As I said, this tastes like Jolly Ranchers to me: sour apple candy. With hints of cantaloupe on the nose and the taste of strawberries rolling off my tongue – I can’t wait to take another sip.
Cave Springs Rosé is made from Cabernet Franc, which is why this wine is so nice and balanced and why the colour is so effing gorgeous. Rosé gets its colour by coming into contact with some of the grape skins that help give red wine its rich and deep colour.
This wine is definitely better after it’s been out of the fridge for ten minutes or so – this is when the flavours really come alive.
Would I buy this again? ABSOLUTELY!
