Sometimes you keep a bottle of wine in your wine fridge, cupboard, or cellar (I wish) and save it for a special occasion or the right moment. I often look through my wine fridge and think about what kind of wine suits the mood, the company, the day of the week. My parents have been hoarding Tawse’s Spark for almost a year now, and I was finally able to convince them to open it (with good reason) this past week. This is a sparkling Riesling (hence the name), and this wine sparkles (pardon the pun) in the glass.

The nose is soft at first, but as it opens up I smell white flowers – daisies and magnolias – and Spark truly begins to dance in the glass. Flavours of pink apples and lemon skin dominate the palette at first sip. This is a gentle sparkling Riesling, but it doesn’t lack complexity. There is depth to the softness of this wine – that’s a testament to Tawse and their reputation as being one of the best wineries in the country.
Great wine should, in my humble opinion, reveal itself to you as you spend more time with it. It’s like getting to know a new friend; the more you sit with it, listen to it, the more you’ll discover. As I spend more time with Spark, I taste honeysuckle and realize that there’s a brightness to this wine – it’s optimistic and uplifting.
Made in the Traditional Method, Spark comes from the Limestone Ridge Vineyard – which is now certified both Biodynamic and Organic. More and more vineyards are leaning towards both biodynamic and organic farming. I am always on the hunt for more organic wines to add to my rotation and given the Sparks flying between me and this sparkling (sorry, I had to), I will absolutely be adding this to my roster.
